Artichoke
There are different properties attributed to the artichoke, mostly linked to the functioning of the liver and gallbladder, to promoting digestion and to the elimination of toxins through urine. Therefore, the inclusion of this vegetable in the diet or taking it as a medicinal plant provides great health benefits at different levels.

Carrot

It is one of the healthiest foods there is. Two of its best-known properties are strengthening the skin and improving eye health. But, apart from that, it has other advantages that make this vegetable one of the best from a nutritional point of view, such as its high fiber and mineral content.

Spinach

Spinach protects the stomach mucosa and acts as a reliever for acidity and heartburn. They are a source of vitamin A, C, K and folic acid; they are also rich in iron and calcium, all of which are important for curing gastritis and gastric ulcers.

Beet

One of the factors that most benefit beets is their phenolic compound, which provides great antioxidant power. It also helps with the body's defense thanks to its high content of vitamin C, fiber and minerals.

Broccoli

Broccoli can be considered a very nutritious vegetable, since it provides a large amount of fiber, minerals and vitamins to the diet, mainly Vitamin C and folates.
Among its minerals we find: phosphorus, iron and potassium. It also provides sulfur, which is responsible for the characteristic odor. It is an excellent source of vitamin K, C, B1, B6, A, E, Chromium, folic acid, Manganese, potassium and copper. It is also rich in omega-3, vegetable protein, calcium, zinc, iron and selenium.
On the other hand, broccoli contains phytonutrients (glycosylates, isothiocyanates and indoles) among which sulforaphane (isothiocyanate) and indole-3-carbinol (indole) stand out, antioxidants (b-carotenes and vitamin C), fiber (soluble and insoluble ) and phytochemical substances.

Celery

Celery is purifying thanks to the minerals it contains. Potassium prevents fluid retention and eliminates toxins. The fiber in celery also helps with good digestion.
